Nicholas de Carew

- Fought in Ireland and on the European continent
- Responsible for Carew construction during Middle Ages, 1280-1310 including: the East and West Ranges, Lesser Hall, Great Hall, Chapel, and Solar
- The Lesser Hall served as the Dining Room for the castle
- An undercroft was built for the storage of beer, wine, and food
- The Great Hall contains 2 fireplaces, a minstrel's gallery, and another undercroft
- Died in 1311
- Also: "Sir Nicholas' ancestor William, son of Gerald de Windsor, was the first to adopt the title 'de Carew' in the tradition of the times."
